It's officially summer – let's take a second to do a happy dance 💃💃💃 – and to me there is nothing more quintessentially summer than a good taco. (You probably thought I was going to say the beach or something, but I'm almost always thinking about food.) I know I'm not alone in eschewing heavy foods during the hottest months of the year, which is why I love nothing more than throwing a few delicious items together in a shell or wrap. I also know we are not alone in enjoying Taco Tuesday pretty much every Tuesday during the summer!
